Delicious bread, with sun-dried tomatoes and olives

Recipe Ingredients for Focaccia

225 g plain white flour
225 g wholemeal flour
2 tsp dried yeast
1 tsp salt
55 g sun-dried tomatoes , drained and chopped
55 g black olives, pitted and chopped
3 tbsp olive oil
250 ml water, tepid
1/2 tsp sea salt , coarse, for sprinkling

Recipe Directions for Focaccia

  1. Mix the flour, yeast and salt together. Stir in the sun-dried tomatoes and olives.

  2. Make a well in the centre, add 3 tbsp oil and enough tepid water to make a soft, but not sticky dough.

  3. Turn the dough onto a lightly floured surface and knead for 10 minutes, or until it is soft and elastic.

  4. Put in a bowl, cover with a clean cloth and leave to rise until doubled in size.

  5. Turn the dough onto a lightly floured surface and knead for 2-3 minutes. Roll out to a flat oval, approx. 2.5 cm thick and place on a lightly greased baking sheet.

  6. Cover the dough with a cloth and leaved until doubled in size again.

  7. Use your fingers to make deep dents on the surface of the dough. Sprinkle with sea salt.

  8. Bake in a preheated oven at 200 C (400 F) for 20-25 minutes or until cooked and golden.

  9. Serve warm or cold, in slices or chunks, on its own or with a vegetable dish.
