Recipe Ingredients for Focaccia Flat Bread

1 1/4 cup warm water
1/4 oz active dry yeast
1 tsp sugar
1 cup whole wheat flour
2 cups unbleached flour
3 tbsp rosemary, fresh
2 tbsp cracked black pepper
3 tbsp olive oil
1/2 cup mushrooms
1/2 cup tomato, sliced
1/2 cup leeks, sliced
1 cup pepper
1/16 cup pumpkin seeds, ground
1/16 cup sunflower seeds, ground
1 tsp Sea Salt

Recipe Directions for Focaccia Flat Bread

  1. mix together warm water, yeast, sugar, let set in warm place til bubbly. Mix flours, half cracked pepper and all of the rosemary, add 1/2 of the olive oil to yeast mixture and add yeast mixture to the flour mixture. Knead until elastic adding oil as needed. Set bowl in warm place to let rise until double. Sautee leeks, peppers, and tomatoes, set aside to cool. Knock down dough when doubled and let rise again. Prepare black iron pan by oiling with olive oil (chicken fryer size, deep-sided with lid,) When dough is double again, take out of bowl and knead then place in prepared iron skillet pressing dough out and up sides of the pan about 1/2 way up sides, and let dough rise about 1/2 double. Then place sliced raw mushrooms on top to dough and then spread the sauteed vegetables on top of the mushrooms. Sprinkle to ground seeds on top and let rise about 30 more minutes. Bake in 350 oven for about 20 minutes uncovered then place lid on pan and bake another 10 minutes and turn off the oven and let set in oven another 15 minutes. Cut 8 ways, for 8 servings. 1 1/4 cup warm water
