Bread and Salad Note: if you don't want to dip your bread you can soak it in the mixture and cut it up in cubes and crips in the oven to make croutons for your salad. :)

Recipe Ingredients for Focaccia Bread and Salad

4 oz focaccia bread
3 oz sun dried tomatoes
4 T extra virgin olive oil
2 T Italian seasoning
1 clove garlic
1/2 tsp salt
1/4 c balsamic vinegar

Recipe Directions for Focaccia Bread and Salad

  1. Use a fresh focaccia bread loaf from the Deli. Slice about 1 inch thick or measure on your scale 2oz on a food scale.

  2. Crisp bread in the oven at 350 for 10-15 minutes. Watch it so it doesn't burn.

  3. In a blender mix all other ingredients. Separate out ingredients on 2 small plates with bread on the side. Eat by dipping the bread into the mixture.

  4. ****Eat bread with a big salad and light dressing.

  5. Make salad loaded with all kinds of veggies and red onion so you get a wide range of vitamens and nutrients in the salad. Use romaine lettuce that you rinse and cut up yourself. Eat about 2-3 cups worth. This makes a filling lunch or dinner.
