Recipe Ingredients for focaccia bread

1 3/4 cups warm water
1 package active dry yeast
1 tablespoon sugar
5 cups all-purpose flour
1 tablespoon kosher salt
1 cup extra-virgin olive oil

Recipe Directions for focaccia bread

  1. in a small bowl place the warm water, sugar, and yeast. Allow to become bubbly and aromatic (this takes at least 15 minutes, be patient).

  2. in a larger bowl measure out five cups of flour, tablespoon of kosher salt, 1/2 cup of olive oil, and the yeast mixture. Mix with a spatula. Once losely together kneed by hand for five or six minutes. Mixture should be smooth and supple.

  3. cover bowl with plastic wrap and let rise for one hour. Dough should be doubled in size.

  4. once doubled, put 1/2 cup of olive oil into a baking sheet with sides. Place risen dough into the oil and spread to fit the pan. Use finger tips to poke holes into the dough. This will give wonderful texture once baked.

  5. Put pan in a warm spot and let rise for another hour. Pre heat oven to 425 fahrenheit.

  6. Once risen sprinkle with coarse salt and drizzle with olive oil. Bake for 25 to 30 minutes or until golden brown.

  7. let cool and enjoy!
