A fluffy cake, sweetened with maple syrup, made without butter. Not especially sweet, but nice and light. If desired, you can add some lemon zest, or a touch of fresh lemon juice to give it a little flavor.

Recipe Ingredients for Fluffy Yogurt Cake

1/3 cup yogurt, plain, skim milk
2 tbsp organic maple syrup
2 tbsp. fat free milk
2 egg whites
1/4 tsp cream of tartar
3/4 cups unbleached all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tbsp. safflower oil (or any vegetable oil)
1/4 tsp oil for greasing

Recipe Directions for Fluffy Yogurt Cake

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Grease and set aside one greased 8"x8" square or round baking pan, preferably spring form.

  3. Whisk together yogurt, maple syrup, milk and if desired, lemon juice. Mix in flour.

  4. In a large mixing bowl, whisk egg whites and cream of tartar until stiff peaks form. Briefly set aside.

  5. Mix safflower oil, baking powder, and baking soda into the yogurt mixture.

  6. Fold yogurt mixture into your meringue. DO NOT OVER-MIX.

  7. Scrape batter into pan. Bake until a toothpick inserted into the center of your cake comes out clean, (approximately ten to fifteen minutes).

  8. Cut into 8 bars or wedges and serve.

  9. VARIATION: if you wish, drizzle a little extra maple syrup (about a tablespoon) over the completed cake, or a teaspoon over each wedge before serving.
