Recipe Ingredients for Fluffy whole wheat raisin pancakes

1 1/2 cups Whole wheat flour
1 1/2 T Splenda
2 tsp molasses
1 T cinnamon
1 T baking powder
1/4 tsp salt
1 1/3 cup 1% milk
1/2 cup applesauce, no sugar added
2 tsp vanilla
1 egg
1/4 cup raisins

Recipe Directions for Fluffy whole wheat raisin pancakes

Separate egg. Beat egg white into stiff peaks and set aside. Mix dry ingredients together. Add wet ingredients to dry ingredients. Gently fold in egg white and let mixture sit for at least 5 minutes. Heat griddle to manufacturers pancake setting. Take 1/4 cup of mix and place onto sprayed griddle for each 3 inch pancake. Turn pancake when there are a lot of bubbles on the top of the pancake, cook for another couple of minutes.
