Recipe Ingredients for Fluffy Tapioca Pudding

2 egg whites
12 tbsp. sugar
6 tbsp. tapioca
4 cups skim milk
2 egg yolks
2 tsp. vanilla

Recipe Directions for Fluffy Tapioca Pudding

  1. Separate the eggs.

  2. In a large saucepan place the milk, tapioca, egg yolks, and 6 tbsp. of the sugar.

  3. Let stand for 5 minutes.

  4. Meanwhile beat the egg whites in an electric mixer on high speed until foamy, then begin adding the other 6 tbsp. of sugar gradually.

  5. Beat until soft peaks form.

  6. Let stand.

  7. Cook the milk mixture over medium heat, stirring constantly, until mixture comes to a full boil (a boil that doesn't stop bubbling when stirred).

  8. Remove from heat. Quckly stir in the egg white mixture until well blended. Stir in vanilla.

  9. Cool 20 minutes, serve warm or chilled.
