Recipe Ingredients for Fluffy Tapioca Pudding

3 T Tapioca
1 egg
3/4 c Half and Half
1 1/4 c 1% Milk
6 T Sugar
1 tsp vanilla
1/2 c. raisins

Recipe Directions for Fluffy Tapioca Pudding

  1. Separate egg

  2. Combine egg yolk, tapioca, 3 T sugar and raisins in pan

  3. Let stand 5 mins.

  4. Whip egg white w/ 3 T sugar until stiff peaks form.

  5. Cook tapioca until boiling.

  6. Add vanilla and egg whites whisk in to incorporate.

  7. Serve chilled or at room temperature
