A reworking of a CC member's Pumpkin Biscuits (pumpkin-spice-biscuits-recipe-r64835). Came out a lot fluffier and lighter than expected.

Recipe Ingredients for Fluffy Pumpkin Bars

0.5 cup Millet Flour
1 cup Brown Rice Flour
2 tsp Salt, Table
6 grams Leavening Agents, Baking Powder, Low-sodium
1 serving Pacific Natural Foods Organic Pumpkin Puree
2 tsp Vanilla Extract
10 grams Apple Sauce Unsweetened Organics
0.5 cup (8 fl oz) Water

Recipe Directions for Fluffy Pumpkin Bars

  1. PREHEAT the oven to 400 degrees.

  2. COAT desert bar pan (12 cup muffin pan or a large cookie) sheet with nonstick spray.

  3. COMBINE all the dry ingredients and 1 tbs of the Splenda Brown Sugar mix in a large mixing bowl.

  4. SEPERATELY mix pumpkin, water, vanilla and 1 tbs Splenda Brown Sugar together until well blended.

  5. POUR liquid mixture into the dry ingredients bowl and mix together completely. Mixture will be light and air.

  6. SPOON one large tablespoon into each section of the desert pan (or drop large tablespoons worth onto cookie sheet).

  7. BAKE at 400 degrees for 10-12 minutes or until golden brown. Test with toothpick or knife to make sure its fully cooked.

  8. LET cool & serve.
