Recipe Ingredients for Fluffy Buckwheat Pancakes

3 cup buckwheat flour
3 cup all-purpose flour
14 teaspoons baking powder
2 teaspoon salt
4 tablespoon white sugar
2 1/2 cups milk
2 1/2 cups water
6 egg whites
1 cup applesauce
1/2 cup ground flaxseed

Recipe Directions for Fluffy Buckwheat Pancakes

  1. In a large bowl, sift together the flours, baking powder, salt, sugar, and flax.

  2. Make a well in the center and pour in the milk, water, and applesauce.

  3. In a separate bowl, beat egg whites until soft peaks form. Fold into batter.

  4. Mix until smooth.

  5. Heat a lightly oiled griddle or frying pan over medium high heat.

  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.

  7. Brown on both sides and serve hot with syrup or honey.

  8. It's possible to prepare batter the night before and refrigerate it covered overnight.
