Recipe Ingredients for Fluffy Baked Eggs and Salami

1/2 pound sliced turkey salami, cut into 1-inch pieces
1/2 cup chopped onion
3 eggs
1 1/4 cups milk
1/2 cup biscuit mix
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup shredded Cheddar cheese

Recipe Directions for Fluffy Baked Eggs and Salami

In a skillet, cook salami until slightly browned; add onion. Cook, stirring frequently, until onion is tender. Drain. Transfer to a 1-1/2-qt. casserole. In a mixing bowl, beat eggs, milk, biscuit mix, salt and pepper until almost smooth. Slowly pour over salami and onion. Bake, uncovered, at 375 degrees F for 30 minutes or until a knife inserted near the center comes out clean. Sprinkle with cheese; let stand 5 minutes before cutting.
