Recipe Ingredients for Fluffy Apple Pancakes

2 cups milk
8 large eggs
1/3 cup sugar
2 tsp. vanilla extract
1 tsp. salt
1/2 tsp. ground cinnamon
1 1/3 cups flour
8 tbsp. butter
4 small apples, peeled, cored, thinly sliced
1/3 cup brown sugar

Recipe Directions for Fluffy Apple Pancakes

  1. Preheat oven to 425F. Whisk together milk, eggs, sugar, vanilla, salt, and cinnamon in a large bowl until well blended. Add the liquid mixture to the flour slowly while stirring to avoid making lumps.

  2. Place butter in a 13x9 inch glass dish. Place dish in the oven until butter melts (5mins). Remove the dish from the oven. Place the apple slices in overlapping rows atop the melted butter in the dish. Return to the oven and bake until apples begin to soften and butter is beginning to brown around the edges of the dish (10mins).

  3. Remove dish from the oven. Pour batter over apples and sprinkle with brown sugar. Bake until puffed and brown (30mins). Serve warm.
