Recipe Ingredients for Flu Fighter Cookies

2 1/4 cups flour
1 1/4 tsp baking powder
3/4 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1 pinch cloves
1/4 tsp salt
1 stick unsalted butter
1 cup dark brown sugar
2 large eggs
1/4 cup molasses
1/4 cup nonfat yogurt
1 tbsp fresh grated ginger
2 tsp finely grated lemon zest (1 lemon)
1/2 cup oats
1 1/4 cups golden raisins
1 1/4 cups cranberries
1 1/4 cups walnuts

Recipe Directions for Flu Fighter Cookies

  1. Line baking pans with parchment paper.

  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt in medium bowl.

  3. Beat butter and brown sugar in a large bowl with a mixer on medium speed until light and fluffy, 3 minutes. Beat in eggs one at a time. Add molasses, yogurt, ginger,and lemon zest and beat until smooth, scraping the sides of bowl as needed. Reduce mixer to low speed and slowly add flour mixture.

  4. Fold in oats and half of the craisins, raisins and walnuts. Mix the other half of the dried fruit and nuts in a bowl and set aside.

  5. Drop heaping tablespoons onto baking sheets. Top each with the dried fruit mixture and chill for 30 minutes.

  6. Preheat oven to 375

  7. Bake cookies until golden but soft, 10-12 minutes. Cool on rack and store in airtight container for 1 week.
