Healthy bran muffins that are fat free and almost sugar free (almost only because of the sugar in All-bran cereal)

Recipe Ingredients for Flourless Fat Free Bran Muffins

3 cups All-Bran Cereal
1 cup 8th Continent Light Original soymilk
1/4 cup Splenda
3 tbs Egg beaters
2 egg whites (beaten stiff)
3/4 cup Applesauce
1 teaspoon Baking soda
1 tbs flax seeds
1 tbs baking Powder
1/2 teaspoon salt
1 teaspoon Cinnamon

Recipe Directions for Flourless Fat Free Bran Muffins

  1. Soak bran in soymilk, set aside.

  2. Meanwhile mix Splenda, egg beaters, applesauce, baking soda, flax seeds, cinnamon, baking Powder and salt, set aside until foamy.

  3. Beat egg whites until stiff. Set aside.

  4. Add softened All-bran/soymilk mixture to Splenda, Egg beaters, Applesauce mixture. Mixing well.

  5. Gently fold the beaten egg whites into the bran mixture.

  6. Spray muffin pan with Pam. Fill muffin tins with 1/3 cup of the batter.

  7. Bake at 350 for 30 minutes.

  8. Muffins will not grow much and will be soft inside, but still delicious specially when served with honey.
