They are a little more crispy than chewy, however they are really delicious. Use a little more oatmeal to make them chewier. Couls also try replacing the butter with applesauce.

Recipe Ingredients for Flourless Chewy Oatmeal Cookies

1/3 cup butter, unsalted
1 1/2 cups rolled oats
1/2 cup sugar
1/4 cup brown sugar, firmly packed
1/8 teaspoon salt
1 teaspoon vanilla extract
1 egg

Recipe Directions for Flourless Chewy Oatmeal Cookies

  1. Melt the butter and set aside to cool.

  2. Place oats in a medium-sized bowl.

  3. Stir in both sugars and the salt and blend to break up any

  4. lumps.

  5. In a separate bowl, whisk together the melted butter, vanilla

  6. and egg.

  7. Stir this into the oat mixture, mixing with your hands or a large

  8. wooden spoon to work in the ingredients.

  9. Form into a large ball of dough.

  10. Chill the dough 20 minutes.

  11. Preheat oven to 350 degrees.

  12. Meanwhile, prepare a baking sheet by lining with parchment

  13. paper.

  14. Form the chilled dough into 1-inch balls and flatten down very

  15. slightly on the baking sheet.

  16. Bake for 13 to 17 minutes or until the edges are nicely browned

  17. and the tops of the cookies are medium golden in color.

  18. Cool well on the baking sheet (about 10 minutes) before

  19. attempting to remove, using a metal spatula or icing knife.

  20. The dough can also be brought to room temperature and

  21. flattened more when placed on the baking sheet to make a

  22. large, crisp and lace-like cookie.

  23. Keep the cookies refrigerated.
