These low-calorie, low-fat muffins are fun to make and guilt-free to enjoy. Applesauce replaces the traditional oil, and considerably reduces fat!

Recipe Ingredients for Flourless Banana Muffins

1 1/2 cups rolled oats
1/2 cup wheat bran
1/4 teaspoon salt
1/4 cup applesauce
1/4 cup blackstrap molasses
2 bananas
1 teaspoon vanilla extract
1 tablespoons baking powder
1 tbsp corn starch

Recipe Directions for Flourless Banana Muffins

  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin tins, or use muffin liners.

  2. In large bowl, combine applesauce, molasses, bananas, and vanilla until smooth. Add cinnamon if desired. Mix in oats, bran cereal, baking powder, cornstarch, and salt. Fill muffin liners halfway with batter.

  3. Bake for 20 to 25 minutes in the preheated oven, until edges are light brown.
