These low-calorie, low-fat muffins are fun to make and guilt-free to enjoy. Applesauce replaces the traditional oil, and considerably reduces fat! Instead of coconut, you can substitute dried fruit, or finely sliced nuts. I also added cinnamon for some extra zest!

Recipe Ingredients for Flourless Banana Mish Mash Muffins

1 cups Oats, Regular And Quick And Instant, Unenriched, Dry
1 cup Wheat Bran, Crude
1 teaspoon Salt, Table
1 cup Applesauce
1 cup Molasses
1 cup Coconut Meat
2 Bananas
1 teaspoon Vanilla Extract
1 tablespoons Leavening Agents, Baking Powder, Low-sodium
1 Egg, Whole

Recipe Directions for Flourless Banana Mish Mash Muffins

  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin tins, or use muffin liners.

  2. In large bowl, combine applesauce, 1 egg, molasses, bananas, and vanilla until smooth. Add cinnamon if desired. Mix in oats, bran cereal, baking powder, and salt. Fold in coconut (or dried fruit, sliced nuts, etc.). Fill muffin liners halfway with batter. Sprinkle with sugar or sugar substitute on top if desired.

  3. Bake for 20 to 25 minutes in the preheated oven, until edges are light brown.
