Pliable, low-fat tortillas. Soft even the next day. Makes 24.

Recipe Ingredients for Flour Tortillas

4 cups flour
2 tablespoons shortening
2 t baking powder
1 t salt
1 1/2 c hot water

Recipe Directions for Flour Tortillas

  1. Mix dry ingredients.

  2. Mix in shortening with fingertips.

  3. Add water to make a fairly sticky dough.

  4. Cover and let it rest to relax the gluten.

  5. Oil or spray hands with PAM and tear off pieces of dough. Roll into balls. Roll very thin on floured surface. Cook 20 seconds or so on heated griddle. Flip and cook again. There will be brown spots like the store-bought ones. Cool on rack and store in kitchen towel until all are cooked.
