Flounder fillet with shrimp, mushrooms and peppers

Recipe Ingredients for Flounder & Shrimp Rollups

1/2 lb flounder fillet
1/2 lb shrimp
1 cup mushrooms
1/4 cup bell peppers
1 slice of onion
2 cloves garlic
1 tsp Italian seasoning
1 tsp lemon juice
1 tbs balsamic vinegar
1 tsp brown sugar

Recipe Directions for Flounder & Shrimp Rollups

  1. Cook mushrooms & peppers in small amount of water with the Italian seasoning.

  2. In a bowl, mix juice of one lemon, balsamic vinegar and brown sugar.

  3. Cut the flounder fillets in half along the bone line. Dip each fillet in the juice mixture, then wrap around a shrimp and place in a greased baking dish.

  4. Top with mushrooms and peppers and remaining juice.

  5. Bake at 350 degrees for 20 minutes.
