Fish fillets with tomatoes and breadcrumbs

Recipe Ingredients for Flounder a la Johnny

3/4 pound cod
2 tbs dry breadcrumbs
2 tbs grated parmesan cheese
2 tomatoes
2 tsp butter

Recipe Directions for Flounder a la Johnny

  1. Heat oven to 350.

  2. In small saucepan, melt 2 tsp butter.

  3. Add breadcrumbs and Parmesan cheese.

  4. Season fish fillets with salt and pepper and spread some of breadcrumb mixture on top (save 1 tbs).

  5. Place fish in baking dish.

  6. Place sliced tomatoes on top.

  7. Bake ~ 10 minutes or until fish is almost cooked through.

  8. Change oven setting to high broil.

  9. Sprinkle remaining breadcrumb mixture on top of fish.

  10. Broil 1-2 minutes or until golden brown.
