Makes 1 serving



Low fat spinach omelet. Using the tiny bit of butter adds decadence without many fat grams.

Recipe Ingredients for Florentine Omelet

1 egg white
1 whole egg
1 cup spinach
2 tbs onion
2 tbs tomato
1 tsp butter
2 tbs low fat cheese
2 grams no fat Greek yogurt
1 cooking spray
1 slice artisan bread
7 g bacon

Recipe Directions for Florentine Omelet

  1. Add 1 tsp butter to small heated pan

  2. Add onion

  3. Add salt and pepper (I like spicy red pepper)

  4. Add spinach

  5. Add tomato

  6. Saute until limp.

  7. Remove. Scramble Egg and egg white together. Spray pan with cooking spray. Cook until set. Put on plate and slide veggies on top of egg. Sprinkle cheese over veggies. Top with yogurt and additional salt if needed. Serve with dry toast.
