These are from Rachel Ray's "30 Minute Meals" and they are fabulous!! The original recipe says that three meatballs are a serving, but they are huge. I've made the serving size one meatball so it is easier to log. There is a separate recipe for the sauce!

Recipe Ingredients for Florentine Meatballs

10 ounces frozen spinach, thawed
2 1/2 pound ground turkey breast
1 medium onion, finely chopped
3 cloves garlic, chopped
1 large egg
1/4 cup milk
3/4 cup bread crumbs
1/2 cup parmesan cheese
1/2 tsp salt
1/8 tsp black pepper
1 tsp extra virgin olive oil

Recipe Directions for Florentine Meatballs

  1. Preheat oven to 400.

  2. Wring defrosted spinach dry in a clean kitchen towel. Place turkey in a bowl and make a well in the middle of it. Add all but 3 tablepsoons of the onion, all of the garlic, the egg, about 1/4 milk, bread crumbs, grated Parmesan, salt and pepper. Mix well. Form into 12 large balls and drizzle with extra-virgin olive oil. Arrange on a nonstick cookie sheet and roast 20 minutes.
