An easy and tasty breakfast for one with a nutrition grade of a B+. I use Trader Joes shredded Lite 3-cheese Blend OR a Lite 4-cheese Blend I purchased from Raley's.

Recipe Ingredients for Florentine Hash/Egg/Cheese Skillet Breakfast

1 teaspoon olive oil
1/2 cup frozen hash browns
1/2 cup frozen chopped spinach
1 large egg
1/4 cup shredded reduced fat cheddar cheese

Recipe Directions for Florentine Hash/Egg/Cheese Skillet Breakfast

  1. Add olive oil to small non-stick skillet

  2. Place frozen hash browns on top of oil

  3. Place the spinach on top of the hash browns

  4. Crack the egg on top of the spinach

  5. Season with a small amount of sea salt and white pepper

  6. Add the shredded cheese

  7. Put a lid on the skillet and cook on low/medium heat for about 5 to 7 minutes until the egg white is "set".
