Recipe Ingredients for Florentine Fritatta

9 whole eggs
16 oz frozen spinach, chopped
14 1/2 oz diced tomatoes
1/4 cup milk
3 cups potatoes, diced
1/2 cup ricotta cheese
2 tsp salt
2 tsp pepper
1 tsp garlic
1 tsp onion powder

Recipe Directions for Florentine Fritatta

  1. Preheat oven to 450. Spray cooking spray to cover bottom and sides of a 13 x 9 pan.

  2. Pare potatoes, dice and add to boiling water. Cook until just tender. Drain water and set aside.

  3. Thaw spinach and press out as much moisture as possible.

  4. Whisk eggs in a large bowl with salt, pepper, garlic and onion powders.

  5. Add ricotta, spinach, tomatoes (including the tomato juice) and potatoes to eggs, incorporating evenly and spread on prepared 13 x 9 pan.

  6. Bake at 450 degrees for about 30 minutes.

  7. Note: this recipe can be easily modified by changing any of the additional ingredients - have fun.
