Recipe Ingredients for Floating Islands

4 egg yolks
67 g sugar (1/3 cup)
400 ml skim milk
1 tsp. vanilla extract
2 egg whites
50 g sugar (1/4 cup)
1 tbsp. cocoa powder, sifted
5 g dark chocolate, grated

Recipe Directions for Floating Islands

  1. Beat egg yolks and 67 g sugar until thick and pale yellow. Add vanilla extract.

  2. Heat milk almost to the boil. (If using a vanilla bean instead of extract, bean should be in milk as it heats then leave to almost-simmer for 5 minutes.)

  3. Slowly pour hot milk into egg-sugar mixture, whisking the whole time. Mix well then return to saucepan.

  4. Cook custard over gentle heat for about 10 minutes, until thick enough to coat the back of a spoon. DO NOT BOIL or the eggs will curdle.

  5. Set custard aside to cool. It can be made up to 2 days before the dessert is to be served. The magazine claims it can even be frozen.

  6. When ready to serve, beat egg whites until soft peaks form. Slowly add the 50 g sugar and cocoa powder (I premixed them), beating after each addition.

  7. Spoon the meringue mixture into 4 tea cups. Microwave each meringue individually for 10-15 seconds on high.

  8. Pour/spoon the custard into serving bowls then gently tip the meringue out of the tea cup to make a floating island.

  9. Garnish with grated dark chocolate.
