Fleming's Chipotle Cheddar Macaroni & Cheese

Recipe Ingredients for Fleming's Chipotle Cheddar Macaroni & Cheese

4 teaspoons kosher salt
16 ounces Elbow Macaroni
2 tablespoons corn oil
3/4 cup onion
4 ounces butter
3 tablespoons flour
2 cups heavy cream
3 cups half and half
1 teaspoon white pepper
12 ounces smoked cheddar cheese
4 ounces cheddar cheese
1 teaspoon chili powder
3/4 cup panko bread crumbs

Recipe Directions for Fleming's Chipotle Cheddar Macaroni & Cheese

  1. Preheat ove to 350 degrees

  2. In a large stock pot, bring water and salt to a boil. With

  3. water boiling, add pasta and cook 8 to 9 minutes. Drain pasta and cool down under cold running water. Pasta should be slightly firm.

  4. Toss pasta with I tablespoon corn oil and reserve.

  5. Melt butter in a large sauce pot set on medium-high

  6. heat.

  7. Add diced onions and saute for 4 to 5 minutes.

  8. Add flour and cook for1 to 2 more minutes. Do not brown.

  9. Add cream, half and half, salt and pepper' and bring to a simmer: Cook until thick, about 5 to 6 minutes.

  10. Blend both grated cheeses into the sauce. Add cooked pasta and place in individual baking crocks or a 12-by-9- inch baking dish.

  11. In a saute pan set on medium-high heat, add I tablespoon of Cornl oil and the chipotle chili powder Heat for 30 seconds, until it starts to smoke.

  12. Remove from stove and quickiy stir in the bread

  13. crumbs. Spread the crumbs over the pasta and bake in 350-degree oven for 15 to 20 minutes, until slightly golden brown and crisp on top.
