These Muffins give you a wonderfull souce of flaxseed, and taste great while doing so....

Recipe Ingredients for Flaxseed Muffins

1 1/2 cup Whole Wheat Pastry Flour
3/4 cup Flaxseed Meal
1 cup Splenda
1 tsp. Baking Soda
1/2 tsp Salt
2 tsp. Cinnamon
1 1/2 cup Carrots
2 Apples
3/4 cup Skim Milk
2 Eggs
1 tsp. Vanilla
1/2 tsp. Nutmeg

Recipe Directions for Flaxseed Muffins

  1. Shred the carrots and apple, you can also add in some nuts, raisins, and oatbran, but I dont like those things, so I dont put them in.

  2. Mix together the flour, faxseed meal, splenda, soda, powder, salt and spices, in a lg bowl. Stir carrots and apples with all the liquid together. Then mix everthing together, but just till moist, over mixing will make them tough....Fill mini muffin cups, so that you get the 24...bake at 350 for about 15 min, and enjoy!!!!YUMMY
