Serving size is one large muffin, but I make mini-muffins that are about 1/3 size for snacking.

Recipe Ingredients for Flaxseed Muffins

1 1/2 cups wheat flour
1 cup oatmeal
1/4 cup flaxseed meal
1 cup skim milk
1/4 cup coconut oil
1 teaspoon vanilla
1 tablespoon baking powder
1 apple (peeled and grated)
1 egg
1/4 cup brown sugar
1/2 cup Splenda
1/2 teaspoon salt

Recipe Directions for Flaxseed Muffins

  1. Mix all dry ingredients together

  2. Mix all liquid ingredients together except coconut oil

  3. grate apple into liquid ingredients and mix

  4. pour liquid into dry ingredients and mix

  5. soften/melt coconut oil in microwave; add to batter and mix well (batter will be stiff)

  6. pour into muffin pan

  7. bake at 400 for 18-20 minutes
