Recipe Ingredients for Flaxseed Muffin - Splenda

1/4 cup flaxseed meal
2 eggs, large
2 cups flour, wheat pastry
1 1/2 t baking powder
1/2 t baking soda
1/2 t salt
3/4 cup buttermilk,low fat
1/4 cup oil
1 tsp vanilla extract
2 t lemon peel
1/4 c Splenda, brown sugar
1/2 c sugar

Recipe Directions for Flaxseed Muffin - Splenda

  1. Combine sugars with eggs in lg bowl; beat about 3 min.

  2. Lightly spoon flour into measuring cup and level.

  3. combine flaxseed meal, flour, baking powder, baking soda, and salt; whisk.

  4. combine buttermilk, oil rind and vanilla. add flour mixture to egg mixture alternating with buttermilk, begin and end with flour.

  5. Spoon into greased muffin pan.

  6. Bake @ 350 x 20 min or until done.

  7. Cool on wire rack.
