From Bob's Flaxseen Meal muffin recipe: this jumbo muffin is a whole meal. I like to keep them frozen and reheat for breakfast. They do have lots of calories, but much better nutrition than other sweet breads. I've reduced the amount of brown sugar here (the original recipe calls for 1 cup). The raisins and nuts could also be reduced or omitted to further reduce calories. The carrots are essential, as are (I think) the apples in order for this "no fat" recipe to work.

Recipe Ingredients for Flaxseed Meal & Oatmeal Muffins

1 1/2 cups Flour
3/4 cup flaxseed meal
3/4 cup oatmeal
3/4 cup brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 cups carrots, finely shredded
2 apples, peeled and shredded
1/2 cup raisins
1 cup walnuts, chopped
3/4 cup milk
2 eggs, beaten
1 tsp. vanilla

Recipe Directions for Flaxseed Meal & Oatmeal Muffins

  1. Mix first eight ingredients (the dry, through the cinnamon) in a large bowl.

  2. Stir in fruits, veggie and nuts.

  3. In another bowl, combine remaining ingredients (milk, eggs and vanilla).

  4. Pour liquid into dry.

  5. Stir just until all is moistened. Don?t overmix.

  6. Fill muffin cups 3/4 full.

  7. Bake at 350 for 15-20 min. for regular muffin tin or 27-30 if you use jumbo muffin tin. Recipe makes 12 - 14 small muffins or 7 jumbo muffins
