Healthier version of chicken nuggets using flaxseed meal

Recipe Ingredients for Flaxseed Chicken Nuggets

4 oz chicken breasts
1/2 cup milled flax seed
1/2 cup bread crumbs
1/4 cup grated parmesan cheese
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 tablespoon Italian seasoning
2 egg whites

Recipe Directions for Flaxseed Chicken Nuggets

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Cut chicken breasts into strips.

  3. In a medium bowl, mix together the flax seed meal, bread crumbs, cheese, salt, Italian seasoning. Mix well.

  4. Put egg whites in a bowl or dish for dipping.

  5. Dip chicken pieces into the egg first, then coat with the flaxseed mixture. Place well coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20-25 minutes.

  6. Flip chicken after 10 minutes
