A high fiber breakfast muffin with lots of flavor

Recipe Ingredients for Flax seed Muffins

1 1/4 cup flax seed meal
2 tsp baking powder
1 tbsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1/2 cup sugar
6 egg white, beaton
1/4 cup oil
1/2 cup water
1 tbsp vanilla
2/3 cup Mango, chunks sugar

Recipe Directions for Flax seed Muffins

  1. preheat oven to 350 F

  2. coat muffins tins with not stick spray

  3. mix dry ingrediants together

  4. mix liquids together

  5. combine both and let stand for 10 minutes, this allows flax seed meal to rehydrate

  6. I use dry fruit, this can add around 3 or more calories per muffin depending on fruit mix

  7. nuts can be added and fresh fruit may be used

  8. cook for 18 minutes tooth pick should come out clean and muffins will pull away from side of pan slightly
