very nice, not too sweet granola.

Recipe Ingredients for Flax Seed & Almond Granola

3 cups rolled oats
1 cup chopped almonds
1 cup unsweetened coconut
1/2 cup raw flax seeds
1/4 cup demerara sugar
1/4 cup brown rice syrup
1/4 cup canola oil
1 cup currants(reserve until baking completed)

Recipe Directions for Flax Seed & Almond Granola

Pre-heat oven to 250 F. Combine dry ingredients except currants and mix well. combine wet ingredients and stir until there is no oil on top. Add wet ingredients to dry ingredients and mix until all dry ingredients are coated. Spread on 2 baking sheets and place in pre-heated oven. Bake for 1 hour, turning over every 20 minutes. Allow to cool and add currants(raisins can be substituted). Place in airtight container and serve 3/4 cup with skim milk or light soy milk. (You can also add this to a cup of plain yogurt for a healthy breakfast.)
