Recipe Ingredients for Flax & Oat Breakfast Power Muffins

1 banana, large
2 tsp extra virgin olive oil
1 egg, large
1/4 cup brown sugar, unpacked
8 tablespoons flaxseed
1/4 cup whole wheat graham flour
1/2 cup oats
1/2 tsp baking soda
1/4 cup walnuts, chopped
1/8 cup apples, dried
1/2 tsp ground cinnamon

Recipe Directions for Flax & Oat Breakfast Power Muffins

  1. Preheat oven to 350 and grease 6 muffin tins.

  2. Mash banana into a medium sized bowl.

  3. Beat in oil, egg, and brown sugar.

  4. Grind 1/2 cup flax in a blender for a couple mins.

  5. In a separate bowl, stir together the dry ingredients (Oats, grinded flax, whole wheat flour, baking soda).

  6. Add dry ingredients into wet and stir. Do not overmix.

  7. Add nuts or dark chocolate chips if preferred.

  8. Spoon into muffin tins.

  9. Bake for 15-20 mins. makes 6 power muffins.
