Recipe Ingredients for Flax muffins

1.5 cup Gold Medal All Purpose Flour
1.25 cup dry Quick Quaker Oats
12 tbsp Flaxseed Meal
1 cup, unpacked Sugars, Brown
2 tsp Baking Soda
1 serving Baking Powder
0.5 tsp Salt, Table
2 tsp Cinnamon, Ground
1.5 cup Shredded Carrots
2 medium (3") Apples
0.5 cup, packed Raisins, Seedless
1 cup Chopped Walnuts
0.75 cup Milk, Reduced Fat, Fluid, 2% Milkfat
2 large egg Eggland's Best Egg
1 tsp Vanilla Extract

Recipe Directions for Flax muffins

  1. Grind the oats into a meal using a food processor. Combine oats with flour, flax meal, brown sugar, baking soda, baking powder, salt, and cinnamon.

  2. Stir in carrots, apples, raisins, and nuts.

  3. Combine milk, beaten eggs and vanilla.

  4. Pour liquid into the dry. Stir until moistened. Do not over mix.

  5. Fill 24 muffin tins 3/4 full, bake at 350 for close to 20 minutes.
