Yumymy and healthful breakfast muffin Substitutions: Raisins and nuts opitional. We always use lowfat soy milk and EnerG egg replacement, as my husband is Vegan. Flax Seed is high in Omega 3's

Recipe Ingredients for Flax Meal Muffins

1 cup brown sugar
1 1/2 cups flour
2 egg whites
1 1/2 cups carrots
1 1/2 cups apples
1 1/2 cup flax seed meal
1 teaspoon baking powder
2 teaspoons baking soda
3/4 cup soy milk
1 cup walnuts
1 cup raisins
2 teaspoons cinnamon
1 teaspoon vanilla

Recipe Directions for Flax Meal Muffins

  1. Shred 2 apples, carrots. Chop walnuts.

  2. Mix all ingredients. Bake in muffin tin about 20 minutes at 375.

  3. Substitutions: Raisins and nuts opitional. We always use lowfat soy milk and EnerG egg replacement, as my husband is Vegan.

  4. Flax Seed is high in Omega 3's
