Recipe Ingredients for Flax-Encrusted Sweet Potato Balls

1/2 cup canned black beans, drained, rinsed, and patted dry
1 medium sweet potato, baked and mashed
6 tablespoons salsa
1/2 cup flax seed
1 tbsp Mustard

Recipe Directions for Flax-Encrusted Sweet Potato Balls

  1. Pre-heat oven to 350.

  2. Mash together salsa, sweet potato, and black beans.

  3. Form mix into five balls.

  4. Spread out ground flax in a low bowl and roll each ball in the flax, coating completely.

  5. Place balls on greased cookie sheet.

  6. Bake for 30 minutes at 350 degrees, rotating once.

  7. Garnish with mustard or sour cream and enjoy!
