For better results, substitute 1 tbsp of ground chia seeds in both pancakes and berry puree. Add a few packets of zero-calories sweetener to the batter for a sweeter taste.

Recipe Ingredients for Flax Apple Pancakes with Berry Puree

3 eggs
3/4 c liquid egg whites
3 tbsp ground flax seeds
1 large apple, cored and grated
3 scoops whey protein powder
1/2 tsp vanilla extract
2 tsp cinnamon
1/2 tsp ground ginger
1/8 tsp ground cloves
1 pinch salt
2 c frozen mixed berries
1 tbsp ground flax seeds

Recipe Directions for Flax Apple Pancakes with Berry Puree

  1. Beat eggs and whites. Add flax (and chia, if using) and let stand 5 minutes. Whisk in protein powder and spices. Fold in grated apple. Drop by 1/4cupfuls onto a heated griddle and cook until edges look dry. Flip and cook until bottom is golden brown.

  2. Thaw the berries in the microwave for about 2 minutes. Add berries and ground flax (or chia) seeds to a blender and puree. Let stand 5-10 minutes to thicken. Stir, and top each pancake with a tablespoon of puree.
