Swedish spinach and feta cheese pie.

Recipe Ingredients for Flatpaj

2 cups spelt flour
100 gram butter
100 gram cottage cheese
9 oz spinach
8 oz feta cheese
15 olives
2 eggs
1 tablespoon milk
1 yellow onion
3 cloves garlic
1/2 tomato
1/2 cup parmesan
1 tablespoon olive oil

Recipe Directions for Flatpaj

  1. Make the dough with spelt, butter and cottage cheese.

  2. Chill for 1 hour.

  3. Sautee sliced onion, add spinach and press over garlic.

  4. Salt and pepper.

  5. Put pie dough into a pan and bake for 15 minutes at 400 degrees.

  6. Put spinach and onions into the pie shell, press down cubed feta cheese and olives.

  7. Slice over tomatoes and put parmesan on.

  8. Bake for 50 minutes.

  9. Enjoy with a green salad!
