Recipe Ingredients for Flat chicken enchiladas

8 oz Fresh Boneless Skinless Chicken Breasts
2 tbsp Nopalitos
0.5 oz Fat Free Cheddar
1 serving Corn Tortillas
5 1/2 oz 100% Low Sodium Vegetable Juice
0.5 tsp Onion Powder
0.25 tsp Garlic Powder
1 serving Premium Selection Italian Seasoning
0.5 serving Chili Powder
0.5 serving Chili Powder
2 Tbsp All Natural Mild Salsa

Recipe Directions for Flat chicken enchiladas

  1. Pre-cook the chicken with no spices or oils.

  2. Toast tortillas in a dry pan on med low.

  3. Hand shred pre-cooked chicken and mix with nopalitos.

  4. Remove toasted tortillas and put chicken mix in pan and warm up, stir frequently.

  5. Pour one serving of V8 into a sauce pan. Add salsa and spices. Stir on med heat until bubbly. Remove from heat.

  6. Place tortillas on plates, top with chicken mix and cheese. Top each with sauce and serve.
