Recipe Ingredients for Flash-fried Asparagus and Long Beans

1 pound asparagus
1/2 pound Chinese long beans
2 tsp peanut oil
2 cloves garlic, minced
2 green onions, chopped
1/3 cup chicken broth
2 tsp Soy sauce
1 tsp sugar
1/2 tsp peppers, red chile dried
1/2 tsp cornstarch, dissolved in 2 tsp water

Recipe Directions for Flash-fried Asparagus and Long Beans

  1. Trim off the tough ends from the asparagus. Cut the spears on the diagonal into 2-inch pieces. Place the asparagus tips in a separate pile. Trim the long beans and cut on the diagonal into 2-inch pieces.

  2. Place a stir-fry pan over high heat until hot. Add the oil, swirling to coat the sides. Add the garlic and green onions and cook, stiring, until fragrant, about 20 seconds. Add the long beans and stir fry until almost tender, about 2 minutes. Add a few drops of water if the pan appears dry. Add the asparagus stems and stir fry for 2 more minutes.

  3. Add the asparagus tips, broth, soy sauce, sugar and red chili flakes and stir well. Cover and cook until the asparagus is tender-crisp, 1 to 2 minutes. Add the cornstarch solution and cook, stirring until the sauce boils and thickens, about 30 seconds.

  4. Transfer to a serving plate and serve.
