Recipe Ingredients for Flank steak and greens

9 oz flank steak
1 onion
2 cloves garlic
1 sweet potato
1 tsp olive oil
2 cups beef broth
1 pound mustard greens
1 tsp cajun spice
1/2 cup quinoa

Recipe Directions for Flank steak and greens

  1. Cut steak against the grain into 1/8 inch strips. Cover with Cajun spice. Spray fry pan lightly with oil. Brown meat for 5 minutes. Add chopped onion, garlic, sweet potato and beef broth. Cover and simmer 20 minutes. Layer greens on top. Cover and cook until wilted. Season to taste.

  2. Serve with cooked quinoa.
