Recipe Ingredients for Five-Star Vegetable Chili

2 tsp olive oil
2 onions, chopped
2 green peppers, chopped
4 cloves garlic, minced
2 jalapeno pepper, minced
2 tbsp dried oregano
4 tsp chili powder
2 tsp ground cumin
2 tsp ground coriander
3/4 tsp ground red pepper
56 oz. diced tomatoes, low sodium
32 oz. no-salt-added tomato sauce
4 cups low-sodium vegetable broth
4 tsp brown sugar
1 cup bulgur
30 oz. cannellini beans, rinsed and drained
30 oz. kidney beans, rinsed and drained
15 oz. black beans
2 carrots
2 celery stalks
12 oz. pumpkin

Recipe Directions for Five-Star Vegetable Chili

  1. Saute onion, green pepper, chopped carrots, chopped celery, garlic, pepper, in olive oil in a large Dutch oven.

  2. Warm a small no-stick skillet over medium high heat. Add oregano, chili powder, cumin, coriander, and red pepper. Stir for 1 to 2 minutes or until fragrant. Add to the vegetable mixture. Add tomatoes with juice, tomato sauce, broth, and sugar.

  3. Increase the heat to medium high and cook, stirring occasionally for 5 minutes. Stir in the bulgur, pumpkin, and all of the beans. Reduce the heat to medium and cook for 15 minutes or until thickened.
