Makes 9 servings



Slow cooker recipe. Supposed to use 15 ounce can of tomato puree but I only have paste. Makes almost (9) 1 c. servings. It's okay. A bit bland. But good when you are sick or to feed a toddler.

Recipe Ingredients for Fitness Magazine's Savory Bean & Spinach Soup

14 ounces vegetable broth
2 T. tomato paste
1 c. water
1/2 c. navy beans
1/2 c. brown rice
1/2 c. onion, minced
1 t. dried basil
1/4 t. black pepper
2 garlic cloves, minced
8 c. spinach

Recipe Directions for Fitness Magazine's Savory Bean & Spinach Soup

  1. Place everything but the spinach in your slow cooker. Cook on low heat for 5 to 7 hours or high heat for 2.5 to 3.5 hours.

  2. Stir in spinach just before serving.
