Recipe Ingredients for Fitness Magazine's Curried Lentil Soup

1 c diced celery
1 c diced carrots
1 c diced onion
4 t canola oil
4 t curry powder
1/8 t ground cumin
1 c dried red lentils
4 c low sodium vegetable broth
2 c canned crushed tomatoes

Recipe Directions for Fitness Magazine's Curried Lentil Soup

  1. Saute diced celery, carrots, and onion in canola oil for 5 minutes.

  2. Add curry powder and pinch of cumin; cook 4 minutes.

  3. Add dried red lentils, low-sodium vegetable broth, and 2 cups canned crushed tomatoes with juice. Simmer 15 minutes, partially covered, until lentils are soft.

  4. Season with salt and black pepper. Soup makes 4 servings.
