Recipe Ingredients for Fitness Mag Fat Fighting Diet - Zuchini Lasagna

410 9/10 grams Tomatoes
2 pieces Garlic Cloves
0.5 tbsp Extra Virgin Olive Oil
0.25 tsp Salt, Table
1/4 tsp Spices Crushed Red Peppers
1 medium Squash, Summer, Zucchini, Includes Skin
1.5 cup chopped raw Baby Bella Mushrooms Packaged
0.67 cup Ricotta, Part Skim Milk Cheese
0.13 cup Shredded Mozzarella Cheese
1 Medium Tomatoes

Recipe Directions for Fitness Mag Fat Fighting Diet - Zuchini Lasagna

  1. Preheat oven to 400'F.

  2. Puree 1 medium ripe tomato and 1/2 can diced italian style tomatoes (make sure to buy ones with no added corn syrup!!) along with 1-2 cloves garlic, 1 t EVOO , 1/4 t salt and 1/4 t crushed red pepper flakes. Set aside.

  3. Heat remaining 1/2 t EVOO in a medium skillet. Peel the zucchini and slice lengthwise (I usually get four strips a little more than 1/4" each) - saute slices with 1 garlic clove, minced, for a few minutes on each side so that they are tender but not soggy! Remove zucchini from skillet. Saute 1-1.5 C sliced mushrooms for 3 minutes (I leave mine in big chunks s they stay more crispy and crunchy!) - set aside.

  4. In a small baking dish layer 1/2 C sauce, half of the cooked zucchini (this is usually two slices for me!), 1/3 C part-skim ricotta, 1 T shredded part-skim mozzarella, and mushrooms. Repeat with remaining zucchini slice(s), 1/3 C part-skim ricotta, 1/2 C sauce, and 1 T shredded part-skim mozzarella.

  5. Bake 15 minutes.
