Mexican-style grilled fish with a kick

Recipe Ingredients for Fish a la Veracruz

32 oz Mahi Mahi
8 oz Tomatoes, Red, Ripe
1 tbsp, drained Capers, Canned
0.13 cup Olive Oil
2 oz Olives
1 lime yields Lime Juice
1 pepper Peppers, Jalapeno
0.5 tsp Salt, Table

Recipe Directions for Fish a la Veracruz

  1. Heat grill to medium-low.

  2. Chop olives, tomatoes, and jalapenos as though making a salsa.

  3. Combine with lime juice and olive oil in a bowl.

  4. Season fish fillets with salt and top with salsa.

  5. Seal completely in foil

  6. Place packets on grill grate and close lid (grill temperature should reach about 450).

  7. Cook fillets until they're done all the way through, 8 to 10 minutes.
