A hearty fish soup, use tilapia, or pretty much any fish you have on hand.

Recipe Ingredients for Fish & Tomato Soup

1/2 medium onion, diced
3 cloves garlic, minced
1/4 cup parsley
1 tbsp basil
1 tbsp oregano
1 tsp salt
1 1/2 tsp pepper
28 oz. tomato sauce
1 lb. tilapia filets, cubed
1/4 cup white rice
3 tbsp. butter

Recipe Directions for Fish & Tomato Soup

  1. Sautee onion and garlic in butter until onion is nearly translucent.

  2. Stir in parsley, basil,oregano, salt and pepper. Add 1/2 cup water.

  3. Boil until liquid is almost gone, then add the tomato sauce and rice.

  4. Simmer for a few minutes, then stir in fish.

  5. Cover and cook on low for 5-10 minutes or until the fish is cooked through.
