A quick fish dish which is good served with couscous.

Recipe Ingredients for Fish Tagine (Taste.com.au)

2 serving Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
2 clove Garlic
1 serving Ground Cumin Spice
1 tsp Paprika
400 grams italian diced tomatoes (coles)
2 tbsp Parsley
80 g Large Pitted Olives
2 tbspn lemon juice
7 serving dory fish

Recipe Directions for Fish Tagine (Taste.com.au)

  1. Use a grater to finely shred lemon rind. Juice lemon and reserve 2 tbspns.

  2. Cut fish fillets into 5 cm (2 in) pieces and set aside.

  3. Heat the oil in a large, deep non-stick frying pan over medium - high heat. Add the finely chopped onion and crushed garllic and cook stirring for 2 monutes or until the onion softens. Add the tspn of cumin and paprika, and cook stirring for 1 minute or until aromatic. Stir in tomatoes, bring to boil, then reduce heat to medium. Remove half of the mixture. Place fish in a single layer over mixture in pan and evenly spoon over remaining mixture. Cover and cook for 4 minutes.

  4. Gently stir in coarsely chopped parsley, olives and reserved lemon juice. Cook uncovered for 3 minutes or until the fish flakes when tested with a fork. This may be served with couscous
