this is a basic recipe for a fish taco or burrito filling. other fish like mahi mahi, shark, wahoo... can be substituted, add some kumquat juice instead of the lime if you wish, serve with shredded lettuce in your favorite flour or corn tortillas with some hot sauce or salsa. sour cream and additional guacamole are further options to vary this recipe.

Recipe Ingredients for fish tacos

1 fillet Cod, Atlantic
4/5 oz Roasted Sweet Corn
1 serving fire roasted bell peppers and onions
76 grams Papaya
0.2 fruit without skin and seeds Avocados
1 serving Cotija
2 tsp Fish Taco Seasoning Mix
0.5 fruit (2" dia) Limes

Recipe Directions for fish tacos

mix everything except the lime, avocado and cotija in a coated pan and cook over high heat until fish is fully cooked stirring frequently (about 5-10 minutes). use 1-2 tbsp per tortilla and add sliced avocado and lime juice. serve with hot sauce.
